The grapes, harvested at full ripeness, undergo cryomaceration for 12 hours at 8°C, gently extracting colour and fruity aromas. Gentle pressing and static gravity clarification (48 hours) follow, producing a pure and clear must. Fermentation in stainless steel at a controlled 16°C preserves vitality, with ageing in stainless steel through to bottling, maintaining directness and persistence.
