The Vino Passito “Vino dei Frati” Sovestro is an artisan sweet wine that evokes the monastic tradition of the estate, rich and enveloping, born from a long natural drying process.
The grapes are harvested in the first week of September and hung to dry on mats until mid-November, concentrating sugars and aromas. They are then pressed and the must clarified by static decantation for around 24 hours, removing impurities for absolute purity.
Fermentation and ageing take place in 50–100 litre caratelli until bottling, a process that lends unique roundness and persistence.
